It seems like everyone and their mamma is either pregnant or having babies recently. I may be slightly biased since I work as a nurse in Labor and Delivery and the birth rate amongst military seems to be higher than the moon. Still, I've reached the age where people are actually trying to get pregnant- planning families, buying homes, starting LIFE. When did we grow up? When did things get so.... real?

Crock Pot Macaroni and Cheese
Unfortunately, this is the only picture I have of this surprisingly delicious dish. I have a good excuse, I promise: I fed my coworkers. My overworked, under-appreciated, exhausted coworkers. The enlisted corpsmen live in dorm style barracks and have little to no facilities to cook food on their own, so they are forced to choke down whatever the hospital's cafeteria has to offer (Hospital food = bad. Military chow hall food = bad. Combine those and that's what they eat daily) or take a taxi out into town since most don't have cars and pay a lot more money to eat local cuisines. I feel for them, I do. I remember missing certain foods when I was a freshman in college and having no money but being completely sick of the cafeteria food. The other option was the 7-11 style store, which sold frozen dinners and junk food, which also gets old extremely fast.

Cashew Chicken
Well people I am back to the land of the living zombies.... aka night shift. Some of my co-workers actually enjoy and prefer night shift, and I say- more power to you, you crazy people. I don't know how they function long term on nights, because I feel awful, exhausted and blah the entire 6 weeks we rotate through vampire land.

Roasted Garlic Hummus
I love hummus. Really anything this versatile with golden roasted garlic, protein and fiber that I can eat with a spoon, veggies or on wraps and sandwiches is a magical ingredient in my opinion. Put it on fish, chicken or toasted bread! Use it in sandwiches instead of mayo- it would go spiffily with bean sprouts, turkey and spinach. Schmear it on a wrap filled with chicken, lettuce, black beans and cucumbers. Dollop it on a salad with tomatoes, carrots, celery and radishes. The possibilities are ENDLESS!

Tuna Pea Wiggle
Sadly I only have one picture of this delicious dish. Me being a complete space cadet left the camera in the "on" position for a couple hours before deciding to make this for dinner, and the battery died after I was able to snap this one shot. What can I say, I've been frazzled lately!! Travis and I are going to Hiroshima for the weekend in celebration of our 3 year wedding anniversary on April 25. I've been working, doing laundry like a crazy woman, cleaning, getting our dog Otis to our friend's house for the duration of our trip and trying to finalize our to-do list for while we are in mainland. It drives Travis crazy, I am sure, that I try to plan out flights, hotels, trains, subways, and busses down based on their schedules I can find online. Despite his free spirit desiring to wander around for 3 days, I am proud of myself for finding them since everything is in Japanese and it can be difficult to determine which link to follow when you're looking at everything written in a very foreign language. I just don't like getting lost, or having a lot of downtime on vacations. I don't like feeling like I've wasted time walking around when I could have researched the destination a little better prior to going. So with that monstrosity of a to do list right before our trip, a quick dinner was in order.

Easter Ham Leftover Pasta
For those of you who might still be in your Easter food coma, I bring to you a quick recap of the last post: while I am not huge fan of ham, my husband Travis is. So this year for Easter, I made a quarter ham that even I thought was pretty tasty, thanks to my rosemary honey glaze. I also made a few other dishes so there was definitely no way Travis was going to pull a Joey-on-Thanksgiving-eatingthewholeturkeyinSantapants-stunt (anyone else a Friends fan?) so we had quite a bit of leftover ham.

Easter Ham Rosemary Glaze
Isn't she a beaut? For a non-ham lover to say this tells you how impressed I was with my own on-the-fly glaze. I've learned the hard way that packaged glazes and gravies are not very tasty, so I usually set aside extra time to make my own.

Easter Hot Cross Buns
Happy Easter! How was your Easter Mass this morning? This year Travis and I decided not to go- last year I was working, and our experience on Okinawa is that services on the big holidays- really just Christmas and Easter- are absolutely insanely packed. Why, hello sardines, nice to smell you. Having to get there an hour early for parking and an actual seat in the pews takes some of the divine magic out of the service for me. My nuns from college would probably slap my wrists with a ruler if they knew I skip the major holiday masses- sorry, Sister. Having been forced to work many holidays over the past few years, I have come to learn that sometimes a walk outside on a beautiful day can bring as much revelation as a well written homily. And I'm ok with that. God did make the world, after all, and why not honor the resurrection by being outside on a beautiful day like today!

Chicken Rollatini
It rained today in Okinawa. Not that rain here is any kind of novelty, but I mean- IT RAINED. Cats and dogs rained. The kind of pelting rain that stings your skin when it hits you- and man oh man it was windy! If I hadn't already checked the weather report I would have worried a typhoon was rolling in. Needless to say, I started my to-do list quite a bit later in the day than I had originally intended, but that's ok. I watched an episode on Hulu and enjoyed some "morning tea" my husband brought back for me from Sasebo. He brought me morning tea and peach flavored tea. Both seem scrumptious, but I had to try the morning tea as it is loose leaf, and I have limited experience with those types- and well, I wanted to experiment. I must say, it was quite tasty! I am looking forward to trying out the peach tea.
